Saudi Rice

Ingredients: 1) 1/2 kilo of cubed lean mince meat. 2) 3 cups of rice, washed and soaked. 3) 1 onion finely chopped. 4) 2 cloves of garlic crushed. 5) 1/2 cup of raisins (optional). 6) 2 large tablespoons of tomato puree. 7) 1 bunch of fresh coriander. 8) salt and pepper to taste. 9) Almonds and pine kernels fried in ghee or margarine.

Directions: 1) Fry the meat in ghee or margarine, add salt and pepper. 2) Add 3 cups of water to the meat, cover and cook for 1/2 hour on medium/low heat. 3) Fry the onions and garlic in ghee or margarine and add the meat and stock to them. 4) Add the tomato puree and mix. 5) When it comes to the boil, add the rice and raisins. Reduce the heat to very low, cover and leave until the rice is cooked. 6) Put the rice in a nice serving dish and dcorate with the fried almonds and pine kernels.
