Fried Aubergines

This is another Lebanese dish that is very easy to make, can also be eaten hot or cold and what's more, it's great for vegetarians. Good luck.

Ingredients:

1 kilo of Aubergines,
1 bunch of fresh parsley,
2 large onions,
5 cloves of garlic,
lemon to taste,
salt to taste,
olive oil to cook and to make the dressing with.

Directions: First, peel and cut the aubergines lengthways around quarter of an inch thick. Fry the pieces in the oil on medium heat, turning them occasionally, until they're dark in colour and soft, then arrange them in a nice dish. Chop the parsley and the onions finely and mix well with the crushed garlic, lemon, salt and some olive oil. Pour over each piece of aubergine and dish up.

This meal is delicious on its own or served with soft fresh warm pitta bread or tortilla wraps.
