Ingredients: A pinch of salt, Allspice, Cinnamon, 2 lemons' juice, 1 medium sized onion finely chopped, 1 large bunch of parsley finely chopped, 4-5 firm tomatoes diced, 1-2 cups bulgar wheat, presoaked in hot water for 1 hour but drained well prior to use.

Mix all these ingredients together in a large bowl and add more salt, lemon and olive oil to taste. My preference is a fair amount of lemon and salt but not a huge amount of olive oil, however, it's up to you.

Present this salad in a nice oval dish and decorate with leaves of lettuce around the edges with a couple of baby lettuces in the middle. These lettuce leaves are then filled with Tabouleh and eaten with it. Romain lettuce is a favourite but any other available lettuce will taste just as nice.
