This dish is one of the easiest, quickest dishes that you will ever cook. Now is the time to impress your guests at the dinner table! Don't be put off by the "oil", as you'll see, it's not as bad as it sounds! In fact, this recipe is a very healthy one that vegetarians and everyone else will just love.

Ingredients: 1kg of green beans (washed and trimmed), 2 large onions (chopped), 6 cloves of garlic (peeled, left whole), 4 tomatoes (washed and chopped), 4 x tbsps of olive oil, salt and pepper to taste and 4 x tbsps of tomato puree.

Fry the onions and garlic in olive oil until they are soft and golden in colour. Add the green beans and cook until they are slightly soft and start to change colour, stirring occasionally. Add the salt and pepper to taste. The add the chopped tomatoes, the tomato puree and enough water just to cover the beans. Cover the saucepan and simmer for about 30 + mins, or until the beans are nice and soft. Stir occasionally.

Pour in a deep serving dish and place on the table for everyone to enjoy. This meal can be eaten hot or cold and tastes delicious with warmed up pitta bread or a flour tortilla wrap. If you are a bit more adventurous, cut up a raw onion or shallot and eat it with this dish. Bon appetit!
